Ingredients

  • 1 pound Italian Sausage
  • 2 Tablespoons Olive Oil, Divided
  • 1 cup Coarsely Chopped Onion
  • 1 Tablespoon Chopped Garlic
  • 3 cans (14 Oz. Size) Chicken Broth
  • 1 cup Water
  • 1 can (14 Oz. Size) Crushed Or Stewed Tomatoes
  • 1 cup Thinly Sliced Carrots
  • 1-1/2 teaspoon Italian Seasoning
  • 1-1/2 cup Sliced Zuchinni
  • 1 package (approximately 10 Oz. Frozen Or 6 1/2 Oz. Dried) Cheese Filled Tortellini
  • Parmesan Cheese For Garnish

Method

  • If sausage comes in casing, remove casing and break up into small pieces. Brown sausage in 1 tablespoon olive oil over medium heat. Remove sausage; cook onion and garlic in same pan (add remaining tablespoon of olive oil if needed) until tender. Add back in cooked sausage and the broth, water, tomatoes, carrots and seasoning. Bring to a boil. Reduce heat; simmer 30 minutes.
  • Skim any fat from soup. Stir in zucchini and tortellini and simmer for 20 minutes.
  • Serve with parmesan cheese sprinkled on top .
