Ingredients

  • 4 qt. boiling water
  • 1 (15 1/2 oz.) can cooked chickpeas or kidney beans
  • 1 (10 oz. ) pkg. frozen cut green beans
  • 1 (10 oz.) pkg. frozen peas
  • 2 c. chopped cabbage
  • 1 large can Italian tomatoes
  • 2 large celery stalks, chopped
  • 1 large onion, quartered
  • 4 medium carrots, diced
  • 1/4 lb. spaghetti, broken into 1-inch pieces
  • 1 bay leaf
  • 4 sprigs parsley
  • 2 tsp. salt or vegetable bouillon

Method

  • To the boiling water, add all ingredients except the spaghetti.
  • Simmer for 30 minutes, then add the spaghetti. Continue to simmer for 15 minutes, stirring occasionally.
  • Add 1 tablespoon olive oil or other before serving.
