- 4 qt. boiling water
- 1 (15 1/2 oz.) can cooked chickpeas or kidney beans
- 1 (10 oz. ) pkg. frozen cut green beans
- 1 (10 oz.) pkg. frozen peas
- 2 c. chopped cabbage
- 1 large can Italian tomatoes
- 2 large celery stalks, chopped
- 1 large onion, quartered
- 4 medium carrots, diced
- 1/4 lb. spaghetti, broken into 1-inch pieces
- 1 bay leaf
- 4 sprigs parsley
- 2 tsp. salt or vegetable bouillon
Method
- To the boiling water, add all ingredients except the spaghetti.
- Simmer for 30 minutes, then add the spaghetti. Continue to simmer for 15 minutes, stirring occasionally.
- Add 1 tablespoon olive oil or other before serving.
