Ingredients

  • 1 (1 1/4 to 1 1/2 lb.) head romaine lettuce, cut into 1-inch pieces
  • 1/2 c. sliced ripe olives
  • 1/2 c. sliced green olives
  • 1/2 c. slivered white onion
  • 1/2 c. slivered red onion
  • 1/2 c. (2 oz.) Mozzarella cheese, shredded
  • 3 Tbsp. thin anchovy strips, rinsed and drained
  • 1/2 c. bottled Italian dressing mix
  • 3 medium tomatoes, cut into 1/2-inch wedges

Method

  • In a large bowl, combine lettuce, olives, onions, cheese and anchovies. Toss lightly. Cover and refrigerate. Right before serving, pour dressing over salad and toss lightly to coat evenly. Sprinkle with dressing mix and garnish with tomatoes. DO NOT put the dressing on the salad until right before you are going to eat it. If you do, you will have mush!!!
