Ingredients
- 3 lb. Ricotta cheese
- 6 eggs
- 2 c. sugar
- cinnamon to taste
- 1 shot Rock & Rye
- 3/4 c. rice
- 1 1/2 c. water
Method
- Mix the first 5 ingredients in large bowl.
- Cook the rice in 1 1/2 cups water for 20 minutes in covered saucepan.
- Rinse with cold water; drain and add to mixture in large bowl.
- Pour into 3 (9-inch) Pyrex pie plates.
- Sprinkle a little cinnamon; bake at 350° for 40 minutes.
- For doneness, check for golden crust or bubbling mixture.
