Ingredients

  • 2 eggs, separated
  • 100g caster sugar
  • 70mL amaretto liqueur
  • 300g mascarpone
  • 500g cherries
  • 1 Italian pandoro cake (available from Italian grocers)

Method

Whisk egg whites in an electric mixer until stiff peaks form. Transfer to a bowl and refrigerate. Combine egg yolks, caster sugar and liqueur and beat in an electric mixer until sugar is dissolved.Add mascarpone and mix well. Fold egg whites into mixture.

Serve mascarpone with fresh cherries and a slice or two of cake.
