- 2 tsp. olive or vegetable oil
- 1 c. onion
- 1 c. shredded carrots
- 1 c. broccoli
- 1/4 c. green pepper
- 2 c. cooked spiral macaroni
- 2 tsp. red wine vinegar
- 1/4 c. fat-free Italian dressing
Method
- In a nonstick skillet, heat oil.
- Add onion, carrots, broccoli and green pepper.
- Cook about 5 minutes, until onion is tender. Add macaroni to nonstick skillet and stir.
- Add vinegar and fat-free Italian dressing.
- Reduce heat and cook on low for about 2 to 3 minutes.
