Ingredients

  • 8 medium red potatoes (about 2 lb.), unpeeled, scrubbed and quartered
  • 2 medium garlic cloves, minced
  • 3 Tbsp. olive oil
  • 1 1/4 tsp. dried oregano
  • 1 1/4 tsp. dried rosemary
  • 1/4 tsp. salt to taste
  • 1/4 tsp. crushed red pepper flakes

Method

  • Preheat oven to 425°.
  • Line a jelly roll pan with foil.
  • In mixing bowl, toss potatoes with olive oil, garlic and seasonings until well coated.
  • Transfer to jelly roll pan and arrange in a single layer.
  • Bake, uncovered, 30 minutes.
  • Turn them over and continue baking until well browned, about 15 to 20 minutes longer. Serve immediately with a big bowl of sour cream for dipping and lots of toothpicks!
