Ingredients
- 8 medium red potatoes (about 2 lb.), unpeeled, scrubbed and quartered
- 2 medium garlic cloves, minced
- 3 Tbsp. olive oil
- 1 1/4 tsp. dried oregano
- 1 1/4 tsp. dried rosemary
- 1/4 tsp. salt to taste
- 1/4 tsp. crushed red pepper flakes
Method
- Preheat oven to 425°.
- Line a jelly roll pan with foil.
- In mixing bowl, toss potatoes with olive oil, garlic and seasonings until well coated.
- Transfer to jelly roll pan and arrange in a single layer.
- Bake, uncovered, 30 minutes.
- Turn them over and continue baking until well browned, about 15 to 20 minutes longer. Serve immediately with a big bowl of sour cream for dipping and lots of toothpicks!
