Ingredients

  • 1/4 c. chopped onion
  • 2 cloves garlic, crushed
  • 1/4 c. soy sauce
  • 2 Tbsp. cooking oil
  • 2 Tbsp. lemon juice
  • 1 tsp. crushed dried red pepper
  • 1 tsp. ground ginger
  • 1/2 tsp. black pepper
  • 1 (2 1/2 to 3 lb.) fryer chicken, cut up

Method

  • Combine onion, garlic, oil, lemon juice, red pepper, ginger and black pepper.
  • Place chicken into plastic bag in deep bowl. Add marinade.
  • Tie bag closed.
  • Refrigerate several hours.
  • Drain and reserve marinade.
  • Pat chicken dry.
  • Place on grill, bone side down over medium hot coals.
  • Grill 30 to 35 minutes.
  • Turn often and brush with marinade.
  • (May be baked in 350° oven until meat is tender.
  • I leave marinade with meat when baking in oven.)
