Ingredients

  • 1 c. creamy peanut butter
  • 3 Tbsp. brown sugar
  • 1 medium lemon/lime
  • 1/2 c. water
  • salt to taste
  • 1 c. bean sprouts
  • 1 c. cabbage, chopped
  • 1 cucumber, sliced
  • 1/2 c. carrots, julienne sliced

Method

  • Boil water, brown sugar and salt.
  • Add the peanut butter, stirring, until the mixture is a thick consistency.
  • Remove from the heat and squeeze in the lemon juice, stirring until the the sauce is smooth.
  • Steam or lightly cook the vegetables.
  • In a large bowl, mix the vegetables and the peanut butter sauce; serve.
