Ingredients

  • 2 cups zucchini, chopped
  • 1 cup tomatoes, chopped
  • 1 cup swiss cheese, shredded
  • 13 cup onion, chopped
  • 2 cups milk
  • 4 eggs
  • 1 cup Bisquick baking mix
  • 13 cup grated parmesan cheese
  • 14 teaspoon salt
  • 18 teaspoon pepper

Method

  • Preheat oven to 400 degrees.
  • Grease pie plate.
  • Sprinkle zucchini, tomato, Swiss Cheese and onion in plate.
  • Beat in remaining ingredients 15 seconds in blender on high or 1 min with a hand beater or until smooth.
  • Pour into plate.
  • Bake 35 minutes or until knife inserted in center comes out clean.
  • Cool 5 minutes.
  • Garnish with tomato slices and succhini slices if desired.
