Ingredients

  • 1/2 c. dry bread crumbs
  • 1/4 c. plus 2 Tbsp. grated Parmesan cheese
  • 1/2 tsp. salt and pepper
  • 1 1/2 Tbsp. minced parsley
  • 6 chicken breast halves, skinned and boned
  • 1/4 c. milk
  • 1/2 c. butter or margarine, melted
  • 1 small clove garlic, crushed
  • 2 to 3 Tbsp. lemon juice
  • paprika

Method

  • Combine first 5 ingredients.
  • Dip each breast in milk and dredge in bread crumb mixture.
  • Arrange in a lightly greased 12 x 8 x 2-inch baking dish.
  • Combine butter, garlic and lemon juice, drizzle over chicken.
  • Sprinkle with paprika.
  • Bake at 350° for 40 minutes or until tender.
  • Serves 6.
