Ingredients

  • 1 c. cornmeal
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 small to medium onion, minced
  • 1 egg
  • 1/2 c. milk

Method

  • Mix together the dry ingredients and the onion.
  • Break in the egg and beat vigorously.
  • Add the milk; stir together.
  • Make small round cakes, 2 inches in diameter.
  • Poke a hole in the center with finger, a doughnut.
  • Slide into deep fat in which fish has been fried, until they are deep brown.
  • Serve hot and at once.
  • Serves 3 to 4.
