Ingredients
- 1 cup brown rice
- 2 cups broth (I used chicken broth)
- 4 ounces chopped fresh mushrooms (1 1/4 cups)
- 2/3 cup chopped onion
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- 2 garlic cloves (minced)
- 1/8 teaspoon pepper
Method
- Combine all ingredients in 3-quart saucepan.
- Bring to boil.
- Reduce heat to low.
- Cover and simmer for 50 minutes.
- Remove from heat and let stand, covered for 10 minutes.
- Stir and serve immediately.
