Ingredients

  • 1 (20 oz.) can chickpeas
  • 1 to 2 cloves garlic
  • 1 to 2 tsp. salt
  • 1/3 c. fresh lemon juice
  • 4 Tbsp. tahini (sesame seed paste)
  • water or juice from chickpeas
  • chopped parsley

Method

  • Drain and rinse chickpeas.
  • Mash peas with a potato masher or ricer and set aside.
  • Crush garlic and add teaspoon of salt. Combine with lemon juice.
  • Stir into chickpeas.
  • Beat in tahini. If mixture is too heavy, add some reserved juice from chickpeas. Can be made in food processor.
  • Chill after garnishing with parsley.
  • Serve with pita bread and raw vegetables.
