Ingredients

  • 2 c. diced, cooked turkey
  • 2 c. finely chopped celery
  • 1/2 small onion, thinly sliced
  • 1 (6 oz.) can water chestnuts, drained and sliced
  • 1/2 small green pepper, cut in short, thin strips
  • 2 Tbsp. chopped pimiento or stuffed olives
  • 1 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 1 c. crushed corn chips
  • 1 c. shredded sharp Cheddar cheese

Method

  • Combine turkey, celery, onion, water chestnuts, green pepper, pimiento, mayonnaise and lemon juice in 1 1/2-quart casserole. Cover.
  • Microwave 10 minutes on #8 setting, stirring after 5 minutes.
  • Sprinkle with corn chips and cheese.
  • Microwave 1 minute on High or until cheese melts.
  • Makes 4 to 6 servings.
