Ingredients
- 4 cooked potatoes
- 1/3 c. diced celery
- 1/4 c. minced onion
- 1/4 c. diced green pepper
- 1/4 c. vinegar
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/2 tsp. dry mustard
- 2 hard-cooked eggs, chopped
- 1/4 c. hot bacon fat
- 1 1/2 c. grated cheese (optional)
Method
- Cook potatoes as directed for boiled potatoes.
- Drain.
- Cube potatoes and combine with celery, green pepper, vinegar, seasoning and chopped eggs.
- Toss lightly to mix.
- Add bacon fat.
- Spoon into an 8-inch glass dish.
- Cook with microwave for 9 minutes. Top with cheese.
- Cook 4 minutes longer.
- Recipe yields 6 servings.
