- 1/2 large onion, chopped fine
- 1/2 rib celery, chopped fine
- 1/2 stick butter
- 1/2 bell pepper, chopped fine
- 1 1/2 cloves garlic, chopped fine
- 4 1/2 doz. oysters (1 1/2 pt.), drained
- 1/4 tsp. mustard
- 1/4 tsp. red pepper
- 1/2 Tbsp. Worcestershire sauce
- juice of 1/2 lemon
- 1/4 loaf French bread
- 1 egg
- 1/4 c. milk
- 1/4 c. chopped parsley
- 1/4 c. green onion tops
Method
- Saute onion, celery, pepper and garlic in butter.
- Chop oysters and add to mixture.
- Add mustard, red pepper, Worcestershire and lemon juice.
- Toast bread, crumble and add to mixture.
- Beat egg in milk and add to mixture.
- Mix in parsley and green onion tops.
- Serve with Ritz crackers.
- Serves 25.
