Ingredients

  • 1/2 large onion, chopped fine
  • 1/2 rib celery, chopped fine
  • 1/2 stick butter
  • 1/2 bell pepper, chopped fine
  • 1 1/2 cloves garlic, chopped fine
  • 4 1/2 doz. oysters (1 1/2 pt.), drained
  • 1/4 tsp. mustard
  • 1/4 tsp. red pepper
  • 1/2 Tbsp. Worcestershire sauce
  • juice of 1/2 lemon
  • 1/4 loaf French bread
  • 1 egg
  • 1/4 c. milk
  • 1/4 c. chopped parsley
  • 1/4 c. green onion tops

Method

  • Saute onion, celery, pepper and garlic in butter.
  • Chop oysters and add to mixture.
  • Add mustard, red pepper, Worcestershire and lemon juice.
  • Toast bread, crumble and add to mixture.
  • Beat egg in milk and add to mixture.
  • Mix in parsley and green onion tops.
  • Serve with Ritz crackers.
  • Serves 25.
