Ingredients
- 1 (16 oz.) pkg. frozen, skinless halibut or haddock fillets
- 2 Tbsp. margarine or butter, melted
- 1/2 tsp. salt
- 1 (8 oz.) jar salsa (mild, medium or hot; your preference)
- 1 (2.2 oz.) can sliced, ripe olives, drained
- 5 lemon or lime wedges
Method
- Place frozen fish on 20 x 12-inch piece of heavy-duty aluminum foil.
- Seal securely.
- Cook on ungreased cookie sheet in 450° oven for 25 minutes.
- Turn back foil and pour margarine over fish. Sprinkle with salt.
- Top with salsa and olives.
- Cook, uncovered, until sauce is hot, about 10 minutes.
- Serve with lemon or lime wedges.
- Yields 5 servings.
