Ingredients
- 2 large cucumbers
- 3 Tbsp. butter
- 1 medium onion, chopped
- 1 Tbsp. dill weed
- 1/4 Tbsp. curry powder
- 1 qt. chicken broth
- 1 c. light cream
Method
- Peel and seed cucumbers.
- Dice them.
- Put onion and cucumbers in butter in frypan.
- Saute 8 to 10 minutes.
- Add chicken broth. Cover and simmer 15 minutes.
- Put in blender with dill, curry powder and cream.
- Blend until smooth.
- Add salt and pepper to taste.
- Put in saucepan and heat just to boiling point (don't continue to let boil).
