Ingredients
- 4 tbsp butter
- 2/3 cup all-purpose flour
- 1 1/4 cups milk
- 5 1/4 oz dark chocolate, melted
- 2 tsp vanilla extract
- 4 None large eggs, separated
- 1/2 cup sugar
- None None Confectioners' sugar, to dust
- None None Whipped cream, to serve
Method
- Preheat oven to 400°F. Grease six 8oz (1-cup) ramekins. Place on a baking sheet.
- Melt butter in a saucepan on low heat. Stir in flour and cook for 1 min. Remove from heat and mix in milk. Return to medium heat, stirring, until sauce boils.
- Stir in chocolate and vanilla extract. Remove from heat and cool slightly. Beat in egg yolks one at a time. Transfer to a large bowl and set aside to cool.
- Using an electric beater, beat egg whites in a large bowl until soft peaks form. Gradually beat in sugar until firm peaks form. Fold into chocolate mixture.
- Spoon mixture into prepared ramekins. Bake for 15-20 mins, until souffles rise.
- Dust with confectioners' sugar and serve with whipped cream.
