Ingredients

  • 1 c. mayonnaise
  • 2 Tbsp. lemon juice
  • 2 tsp. grated onion
  • salt to taste
  • 2 c. cooked, diced chicken or turkey
  • 2 c. chopped celery
  • 1 c. sliced almonds
  • 1/2 c. Parmesan cheese
  • potato chips

Method

  • Blend meat lightly with mayonnaise, lemon juice and onion; mix.
  • Add celery and almonds.
  • Mix it all and put in baking dish. Top with 1 cup crushed potato chips and 1/2 cup grated Parmesan cheese.
  • Bake at 450° for 10 minutes.
  • I double everything!
  • Even better leftover and cold.
  • Great for lunch.
