Ingredients
- 1 c. mayonnaise
- 2 Tbsp. lemon juice
- 2 tsp. grated onion
- salt to taste
- 2 c. cooked, diced chicken or turkey
- 2 c. chopped celery
- 1 c. sliced almonds
- 1/2 c. Parmesan cheese
- potato chips
Method
- Blend meat lightly with mayonnaise, lemon juice and onion; mix.
- Add celery and almonds.
- Mix it all and put in baking dish. Top with 1 cup crushed potato chips and 1/2 cup grated Parmesan cheese.
- Bake at 450° for 10 minutes.
- I double everything!
- Even better leftover and cold.
- Great for lunch.
