Ingredients

  • 12 med. beets, cooked and drained
  • 1 Tbsp. cornstarch
  • 1/2 c. vinegar
  • 2 Tbsp. butter or margarine
  • 1/4 c. sugar
  • 1/4 tsp. salt
  • 1/4 c. grape jelly
  • 1 tsp. slivered orange peel

Method

  • Remove the skins from beets; trim and dice.
  • In saucepan combine sugar, cornstarch and salt.
  • Blend in vinegar and jelly. Cook over moderate heat, stirring constantly until thickened and smooth.
  • Add butter and beets.
  • Simmer 10 minutes stirring occasionally.
  • Garnish with orange peel.
  • Serves 6.
