Ingredients
- 12 med. beets, cooked and drained
- 1 Tbsp. cornstarch
- 1/2 c. vinegar
- 2 Tbsp. butter or margarine
- 1/4 c. sugar
- 1/4 tsp. salt
- 1/4 c. grape jelly
- 1 tsp. slivered orange peel
Method
- Remove the skins from beets; trim and dice.
- In saucepan combine sugar, cornstarch and salt.
- Blend in vinegar and jelly. Cook over moderate heat, stirring constantly until thickened and smooth.
- Add butter and beets.
- Simmer 10 minutes stirring occasionally.
- Garnish with orange peel.
- Serves 6.
