Ingredients

  • 1 large can whole apricots
  • 1 large can pineapple chunks
  • 1 or 2 large cans other fruits
  • 1/2 c. brandy or sweet vermouth
  • 1 c. honey (preferably dark)
  • 2 to 3 c. liquid from canned fruits
  • 2 sticks cinnamon
  • slivered pieces of 1 orange
  • 1 c. grated coconut

Method

  • Bring to a boil the honey, fruit, liquid, cinnamon sticks and oranges.
  • Simmer for about 1/2 hour; let cool.
  • Arrange fruits, except for pineapple, inside bottom and sides of glass bowl.
  • Put pineapple in center.
  • Pour brandy or sweet vermouth over fruit and let stand.
  • Mix coconut with boiled honey mixture and pour over fruit.
  • This should cover the fruit fairly well.
  • Let stand at least 6 hours, 24 hours or overnight is better, before serving.
