Ingredients
- 1 large can whole apricots
- 1 large can pineapple chunks
- 1 or 2 large cans other fruits
- 1/2 c. brandy or sweet vermouth
- 1 c. honey (preferably dark)
- 2 to 3 c. liquid from canned fruits
- 2 sticks cinnamon
- slivered pieces of 1 orange
- 1 c. grated coconut
Method
- Bring to a boil the honey, fruit, liquid, cinnamon sticks and oranges.
- Simmer for about 1/2 hour; let cool.
- Arrange fruits, except for pineapple, inside bottom and sides of glass bowl.
- Put pineapple in center.
- Pour brandy or sweet vermouth over fruit and let stand.
- Mix coconut with boiled honey mixture and pour over fruit.
- This should cover the fruit fairly well.
- Let stand at least 6 hours, 24 hours or overnight is better, before serving.
