Ingredients

  • 2 pkg. active dry yeast
  • 4 1/2 c. warm water (110~ to 115~)
  • 6 Tbsp. sugar
  • 2 Tbsp. salt
  • 1/4 c. shortening, melted and cooled
  • 12 to 12 1/2 c. all-purpose flour

Method

  • In a large mixing bowl, dissolve yeast in water.
  • Add sugar, salt and shortening.
  • Stir until dissolved.
  • Add half the flour; beat until smooth.
  • Mix in enough remaining flour to form a soft dough that does not stick to sides of bowl.
  • Turn onto floured surface.
  • Knead 8 to 10 minutes.
  • Place in a greased bowl, turning once to grease top.
  • Cover and allow to rise in a warm place until doubled, about 1 hour.
  • Punch down dough.
  • Cover and let rest for 15 minutes.
  • Divide dough into 4 parts.
  • Shape into loaves.
  • Place in greased 9 x 5 x 3-inch pans.
  • Let rise until doubled, about 30 to 35 minutes.
  • Remove from pans and cool on wire racks.
