Ingredients
- 1 lb. seedless raisins
- 2 c. sugar
- 2 c. water
- 2 Tbsp. lard (shortening)
- 2 tsp. cinnamon
- 1/2 tsp. salt
- 3 c. flour
- 1 level tsp. baking soda
- 1 level tsp. baking powder
Method
- Boil first 5 ingredients.
- Mix flour, salt, baking soda and baking powder.
- Sift and mix with boiled mixture.
- Pour into two small bread loaf pans and bake at 350° for 1 hour.
- Or for a large cake, pour into regular sized bread loaf pan and bake for 1 1/2 hours.
- When cool, frost with white buttercream icing.
- Decorate with nuts and candied fruit.
