Ingredients

  • 1 lb. seedless raisins
  • 2 c. sugar
  • 2 c. water
  • 2 Tbsp. lard (shortening)
  • 2 tsp. cinnamon
  • 1/2 tsp. salt
  • 3 c. flour
  • 1 level tsp. baking soda
  • 1 level tsp. baking powder

Method

  • Boil first 5 ingredients.
  • Mix flour, salt, baking soda and baking powder.
  • Sift and mix with boiled mixture.
  • Pour into two small bread loaf pans and bake at 350° for 1 hour.
  • Or for a large cake, pour into regular sized bread loaf pan and bake for 1 1/2 hours.
  • When cool, frost with white buttercream icing.
  • Decorate with nuts and candied fruit.
