Ingredients

  • 4 eggs
  • 1 1/2 c. sugar
  • 2/3 c. flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 Tbsp. melted margarine
  • 1 tsp. vanilla
  • 5 c. flaked coconut
  • 1 (10 oz.) jar cherries, drained and halved

Method

  • In a mixing bowl beat the eggs until foamy.
  • Gradually add sugar, beating constantly until thick and pale yellow.
  • Stir together dry ingredients; fold into egg mixture.
  • Stir in butter, vanilla and coconut.
  • Drop by teaspoonfuls onto greased and floured cookie sheets.
  • Top with cherries.
  • Bake at 325° for 10 to 13 minutes.

  • 6 dozen.
