Ingredients

  • 3/4 cup shortening
  • 1 cup sugar
  • 3 eggs
  • 1/3 cup orange juice
  • 1 tablespoon rum extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1-1/2 cups chopped mixed candied fruit
  • 1 cup raisins
  • 1 cup chopped pecans

Method

  • In a large bowl, cream shortening and sugar until light and fluffy. Beat in the eggs, orange juice and extract. Combine the flour, baking powder, baking soda and salt; gradually add to creamed mixture and mix well. Stir in the candied fruit, raisins and pecans.
  • Drop by teaspoonfuls 2 in. apart onto ungreased
  • . Bake at 350° for 10-12 minutes or until golden brown. Remove to wire racks. Store in an airtight container.
