Ingredients
- 4 tsp. baking soda
- 2 1/2 c. boiling water
- 2 c. raisins
- 1/2 tsp. salt
- 3/4 c. brown sugar
- 4 c. flour
- 1 c. sugar
- 4 Tbsp. oil
Method
- Mix baking soda and boiling water and pour over raisins; let stand overnight.
- Do not stir in the morning.
- Add remaining ingredients to raisin mixture; mix well.
- Grease and flour three 1-pound coffee cans and divide mixture evenly.
- Bake at 350° for 1 hour or until done.
- Cool 1/2 hour in cans before removing breads. Place cans on side and turn until bread is loosened.
- Slice and serve with butter or cream cheese.
