Ingredients

  • 650 g (1 lb 5 oz) red-skinned potatoes
  • 1 red (Spanish) onion
  • 1 tablespoon chopped fresh mint
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped fresh chives
  • 4 tablespoons mayonnaise
  • 4 tablespoons plain yoghurt

Method

1. Scrub the potatoes (do not peel) and cut into cubes. Cook in a large pan of boiling water until just tender, drain and cool completely. Finely slice the onion.

2. Place the potatoes, onion and herbs in a large bowl. Combine the mayonnaise and yoghurt, then gently mix through to coat the potato, taking care not to break it up too much. Serve at room temperature.
