Ingredients

  • 1 1/4 cups couscous
  • 1/2 cup coarsely chopped fresh cilantro
  • 1/2 cup coarsely chopped fresh parsley
  • 2 None green onions, thinly sliced
  • 1 medium red pepper, seeded and thinly sliced
  • 1/2 tbsp finely chopped preserved lemon peel
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1/4 cup extra virgin olive oil
  • 1 tsp grated lemon peel

Method

  • Place couscous and 1/4 tsp salt in a bowl; cover with 1 cup boiling water and mix gently with a fork. Cover bowl with a lid or plastic wrap. Let stand for 10 mins.
  • Fluff couscous with a fork. Stir in herbs, onion and pepper.
  • Mix preserved lemon, lemon juice, honey and oil in a small bowl until well combined. Pour over couscous and toss gently. Season to taste with sea salt and freshly ground black pepper. Top with lemon peel.
