Ingredients
- 1/4 cup whole-wheat panko (Japanese breadcrumbs)
- 2 teaspoons olive oil
- 1 1/2 teaspoons chopped fresh thyme
- 1 1/2 teaspoons chopped fresh flat-leaf parsley
- 1/4 teaspoon black pepper
- 1/8 teaspoon kosher salt
- 2 (4-ounce) tomatoes, halved horizontally
- Cooking spray
Method
- Preheat oven to 425°.
- Combine first 6 ingredients in a small bowl. Place tomato halves, cut side up, on a foil-lined baking sheet coated with cooking spray. Top tomatoes with panko mixture; coat with cooking spray. Bake at 425° for 25 minutes. Turn broiler to high (do not remove pan from oven). Broil 2 minutes or until topping is browned.
