Ingredients

  • 1/4 cup whole-wheat panko (Japanese breadcrumbs)
  • 2 teaspoons olive oil
  • 1 1/2 teaspoons chopped fresh thyme
  • 1 1/2 teaspoons chopped fresh flat-leaf parsley
  • 1/4 teaspoon black pepper
  • 1/8 teaspoon kosher salt
  • 2 (4-ounce) tomatoes, halved horizontally
  • Cooking spray

Method

  • Preheat oven to 425°.
  • Combine first 6 ingredients in a small bowl. Place tomato halves, cut side up, on a foil-lined baking sheet coated with cooking spray. Top tomatoes with panko mixture; coat with cooking spray. Bake at 425° for 25 minutes. Turn broiler to high (do not remove pan from oven). Broil 2 minutes or until topping is browned.
