Ingredients

  • 1 bunch of fresh marjoram, leaves picked
  • 8 tablespoons extra virgin olive oil
  • 7 to 8 ounces good-quality French goats' cheese
  • 2 good handfuls of arugula
  • 1 fennel bulb, halved and very finely sliced
  • A handful of good pitted black olives
  • 1 bunch of fresh basil, leaves picked
  • Juice of 1/2 a lemon
  • Sea salt and freshly ground black pepper
  • 2 red chillies, deseeded and finely sliced

Method

  • Preheat your oven to 400F.
  • Chop or pound your marjoram and add to a bowl with a couple of tablespoons of olive oil and a pinch of pepper.
  • Rub this mixture all over the goats cheese then bake in the preheated oven for around 10 minutes until nice and golden.
  • Add your arugula, fennel, olives and basil to a bowl and dress your salad with around 6 tablespoons of extra virgin olive oil and your lemon juice, and season.
  • Divide onto 4 plates, crumble over your tasty goats' cheese and sprinkle over your chilli to finish... fantastic!
