Ingredients
- 6 c. water
- 1/2 tsp. salt
- 1 1/2 c. uncooked regular grits
- 1/2 c. butter or margarine
- 4 c. (1 lb.) shredded medium-sharp Cheddar cheese, divided
- 3 eggs, beaten
Method
- Combine water and salt; bring to a boil.
- Stir in grits; cook until done, following package directions.
- Remove from heat.
- Add butter and 3 3/4 cups cheese; stir until cheese melts.
- Add a small amount of hot grits to eggs, stirring well; stir egg mixture into remaining hot grits.
- Pour grits into a lightly greased 2 1/2-quart baking dish.
- Bake at 350° for 1 hour and 10 minutes.
- Sprinkle with remaining 1/4 cup cheese; bake an additional 5 minutes. Yields 8 servings.
