Ingredients

  • 6 c. water
  • 1/2 tsp. salt
  • 1 1/2 c. uncooked regular grits
  • 1/2 c. butter or margarine
  • 4 c. (1 lb.) shredded medium-sharp Cheddar cheese, divided
  • 3 eggs, beaten

Method

  • Combine water and salt; bring to a boil.
  • Stir in grits; cook until done, following package directions.
  • Remove from heat.
  • Add butter and 3 3/4 cups cheese; stir until cheese melts.
  • Add a small amount of hot grits to eggs, stirring well; stir egg mixture into remaining hot grits.
  • Pour grits into a lightly greased 2 1/2-quart baking dish.
  • Bake at 350° for 1 hour and 10 minutes.
  • Sprinkle with remaining 1/4 cup cheese; bake an additional 5 minutes. Yields 8 servings.
