Ingredients

  • 1/2 head cabbage
  • 3 tablespoons apple cider vinegar
  • 1 bunch green onions, sliced fine
  • 1/2 cup mayonnaise
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoons cayenne pepper
  • 3 carrots, grated

Method

  • Slice the cabbage into whisper-thin ribbons. Finely chop the green onions. Add both to a large bowl.
  • Douse the cabbage and green onions with the cider vinegar, and toss.
  • Drop the mayonnaise, salt and cayenne into the cabbage. Mix until blended.
  • Gently fold the grated carrots into the cole slaw. You don't want to be too rough with this part or the carrots will bleed orange throughout the slaw, turning it a Creamsicle color.
