Ingredients

  • 1 lb pastured sausage (or natural sausage)
  • 1 sweet potato (I used japanese sweet potatoes) you could use 2 small red potatoes if you'd like ( dice into small cubes for faster cooking time!
  • 1 large onion, chopped
  • 2 strips of bacon -cooked and crumbled (optional)
  • 3 tsp garlic powder
  • 2 c kale (I added a little more because I LOVE KALE!!!!!)
  • 2 c chicken broth
  • 4 C water
  • 1 c unsweetened almond milk or you could use a 1/2 c heavy cream
  • 1 tb of chili powder
  • salt/pepper to taste
  • **Optional additions:- We put raw shrimp in our soup tonight- so about 1 cup raw peeled shrimp

Method

  • Directions:
  • Brown sausage in your soup pot.
  • Add chicken broth and water to pot and stir.
  • Place onions, potatoes, and garlic in the pot.
  • Cook on medium heat until potatoes are done. (if using sweet potatoes, it will take a little longer)
  • Add bacon.
  • Salt and pepper to taste.
  • Simmer for another 10 minutes.
  • Turn to low heat.
  • Add kale and cream.
  • Heat through and serve.
  • You can sprinkle a little romano cheese on top for added restaurant effect :)
  • you might want to double this recipe because it does NOT last long!!!! :)
