Ingredients

  • 4 slices whole wheat bread, made into fine crumbs in blender
  • 1-1/3 c. instant nonfat dry milk
  • 1/2 tsp. baking powder
  • 2 Tbsp. margarine, softened
  • 1 c. crushed pineapple, no sugar added
  • 2 med. apples, peeled, cored and grated
  • artificial sweetener to equal 1/2 c. sugar
  • 1/2 tsp. coconut extract
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon

Method

  • In a bowl combine ingredients in order given.
  • Mix after each addition with wire whip or electric mixer.
  • Pour batter into 8 x 8 inch nonstick pan.
  • Bake at 350° for 1 hour or until done.
  • Loosen cake from pan with a spatula.
  • Cut into bars, dividing equally into 4 portions.
  • Serves 4.
