- 4 slices whole wheat bread, made into fine crumbs in blender
- 1-1/3 c. instant nonfat dry milk
- 1/2 tsp. baking powder
- 2 Tbsp. margarine, softened
- 1 c. crushed pineapple, no sugar added
- 2 med. apples, peeled, cored and grated
- artificial sweetener to equal 1/2 c. sugar
- 1/2 tsp. coconut extract
- 1 tsp. vanilla
- 1/2 tsp. cinnamon
Method
- In a bowl combine ingredients in order given.
- Mix after each addition with wire whip or electric mixer.
- Pour batter into 8 x 8 inch nonstick pan.
- Bake at 350° for 1 hour or until done.
- Loosen cake from pan with a spatula.
- Cut into bars, dividing equally into 4 portions.
- Serves 4.
