Ingredients
- 3 c. cubed cooked pork
- 2 Tbsp. oil
- 3 Tbsp. soy sauce
- 2 (8 oz.) cans chunk pineapple
- 1/4 c. vinegar
- 1/2 c. dark brown sugar, packed
- 2 Tbsp. cornstarch
- 1/2 c. cold water
- 1 green pepper, cut in strips
- 1 onion, sliced
- 2 Tbsp. butter
Method
- Cut pork in 3/4 inch cubes.
- Brown slightly in oil and sprinkle with soy sauce.
- Place meat in 2-quart casserole.
- Drain pineapple, saving syrup.
- Add pineapple to meat.
- Add pineapple syrup and vinegar to skillet and heat.
- Mix sugar, cornstarch and water and add to hot liquid and cook, stirring until clear and slightly thickened.
- Pour over meat mixture.
- Cover and bake in 350° oven for 20 minutes.
- Cook green pepper and onion in butter 3 to 4 minutes.
- Add to casserole and bake 10 minutes longer.
