Ingredients

  • 3 c. cubed cooked pork
  • 2 Tbsp. oil
  • 3 Tbsp. soy sauce
  • 2 (8 oz.) cans chunk pineapple
  • 1/4 c. vinegar
  • 1/2 c. dark brown sugar, packed
  • 2 Tbsp. cornstarch
  • 1/2 c. cold water
  • 1 green pepper, cut in strips
  • 1 onion, sliced
  • 2 Tbsp. butter

Method

  • Cut pork in 3/4 inch cubes.
  • Brown slightly in oil and sprinkle with soy sauce.
  • Place meat in 2-quart casserole.
  • Drain pineapple, saving syrup.
  • Add pineapple to meat.
  • Add pineapple syrup and vinegar to skillet and heat.
  • Mix sugar, cornstarch and water and add to hot liquid and cook, stirring until clear and slightly thickened.
  • Pour over meat mixture.
  • Cover and bake in 350° oven for 20 minutes.
  • Cook green pepper and onion in butter 3 to 4 minutes.
  • Add to casserole and bake 10 minutes longer.
