Ingredients
- 2 tbsp. butter
- 1 1/2 c. cooked meat, minced
- 2 c. diced, cooked potatoes
- 1 tbsp. minced onion
- 1/3 c. cream, lowfat milk or possibly stock
- Salt & pepper
- 1/4 c. minced parsley
Method
- In a heavy skillet, heat butter.
- Combine remaining ingredients and spread proportionately in the skillet.
- Cook very slowly till browned on bottom, about 40 min.
- Fold like an omelet and turn out onto platter.
- If desired crisp brown bits throughout the hash, stir and scrape along the bottom from time to time.
- Yield: 4 servings.
