Ingredients

  • 2 tbsp. butter
  • 1 1/2 c. cooked meat, minced
  • 2 c. diced, cooked potatoes
  • 1 tbsp. minced onion
  • 1/3 c. cream, lowfat milk or possibly stock
  • Salt & pepper
  • 1/4 c. minced parsley

Method

  • In a heavy skillet, heat butter.
  • Combine remaining ingredients and spread proportionately in the skillet.
  • Cook very slowly till browned on bottom, about 40 min.
  • Fold like an omelet and turn out onto platter.
  • If desired crisp brown bits throughout the hash, stir and scrape along the bottom from time to time.
  • Yield: 4 servings.
