Ingredients

  • 1 (2 lb.) pkg. frozen hash brown potatoes
  • 1 stick butter, melted
  • 1/2 c. green onions, chopped
  • 12 oz. Cheddar cheese, grated
  • 1/4 tsp. cayenne pepper
  • 1 can cream of chicken or mushroom soup
  • 1 tsp. salt (can be omitted)
  • 1/2 tsp. black pepper
  • 1 pt. sour cream
  • bread crumbs or Ritz crackers, crushed

Method

  • Reserve half of the butter.
  • Mix the first 9 ingredients and place in well buttered casserole dish.
  • Mix bread crumbs with the reserved melted butter; sprinkle on top of casserole.
  • Cover and bake approximately 1 hour and 10 minutes at 350°, then uncover and bake approximately 10 to 15 minutes longer.
