- 1 (2 lb.) pkg. frozen hash brown potatoes
- 1 stick butter, melted
- 1/2 c. green onions, chopped
- 12 oz. Cheddar cheese, grated
- 1/4 tsp. cayenne pepper
- 1 can cream of chicken or mushroom soup
- 1 tsp. salt (can be omitted)
- 1/2 tsp. black pepper
- 1 pt. sour cream
- bread crumbs or Ritz crackers, crushed
Method
- Reserve half of the butter.
- Mix the first 9 ingredients and place in well buttered casserole dish.
- Mix bread crumbs with the reserved melted butter; sprinkle on top of casserole.
- Cover and bake approximately 1 hour and 10 minutes at 350°, then uncover and bake approximately 10 to 15 minutes longer.
