Ingredients

  • 1 lb. ground beef or turkey
  • 1 c. chopped onions
  • 1 c. sliced carrots
  • 1 c. sliced celery
  • 3 c. beef broth
  • 3 c. water
  • 1 (16 oz.) can whole tomatoes, undrained and cut up
  • 1/2 c. Homemade Seasoned Rice Mix
  • 1/4 c. ketchup
  • 1 to 2 tsp. dried basil leaves
  • 1 bay leaf

Method

  • In 4-quart saucepan or Dutch oven, brown ground beef with onions, carrots and celery.
  • Drain well.
  • Add remaining ingredients; stir to combine.
  • Bring to a boil.
  • Reduce heat. Cover and simmer 25 to 35 minutes or until vegetables and rice are tender.
  • Remove bay leaf.
