Ingredients

  • 1 (8 lb.) pumpkin
  • 2 lb. ground beef
  • 2 c. chopped onion
  • 1 c. chopped green pepper
  • 2 minced garlic
  • 2 tsp. salt
  • 1/2 tsp. thyme
  • 1/2 tsp. pepper
  • 1 can pitted black olives, chopped
  • 1 can kidney beans
  • 2 (8 oz.) cans tomato sauce
  • 4 beaten eggs

Method

  • Cut top from pumpkin and clean out.
  • Brown beef and onion. Add green pepper and garlic.
  • Cook 1 minute longer.
  • Add remaining ingredients.
  • Spoon into pumpkin.
  • Bake at 350° for 2 to 2 1/2 hours.
  • Do not parboil pumpkin or brush outside with oil.
  • Cook with top off.
