Ingredients

  • 1 bunch cauliflower
  • 4 leaks chopped
  • 2 stick celery chopped
  • 1 large carrot diced
  • 400 ml chicken stock
  • 250 ml heavy cream
  • 45 grams butter

Method

  • Chop all ingredients up and break cauliflower into florets.
  • Saute chopped veg (except cauliflower) in melted butter.
  • When soft add stock and cauliflower.
  • Cover with lid and cook until cauliflower is cooked through.
  • Let it cool for 20 mins and then blend in blender or food processor.
  • Add cup of fresh cream stir and heat through.
  • Serve sprinkled with some paprika.
  • Hint.
  • You could also fry bacon till crispy and sprinkle over soup.
