Ingredients

  • 3 tablespoons butter
  • 12 teaspoon chili powder
  • 12 teaspoon oregano
  • 1 teaspoon paprika (hot, not sweet)
  • 1 garlic clove, minced
  • 1 dried bay leaf, crumbled
  • 2 lbs shrimp, with tails on shelled and deveined
  • 2 tablespoons fresh lemon juice

Method

  • Melt butter in large heavy skillet and add garlic and spices (except for lemon juice).
  • Cook on medium heat for 2 minutes then immediately take off the heat and let rest for 20 minutes or so.
  • Reheat butter mixture and saute shrimp, flipping around with a spatula, for 4-5 minutes or until shrimp just turns white.
  • Drizzle lemon juice on top and place on bed of rice.
  • Pour excess butter/spice mixture over all.
