Ingredients
- 1 qt. milk
- 1/2 c. butter
- 1 c. hominy grits
- 1 c. cheese (Gruyere)
- 1 tsp. salt
- 1/8 tsp. pepper
- 1/3 c. grated Parmesan cheese
Method
- Bring milk to a boil, add butter then gradually stir in grits. Be sure to not use quick cooking grits.
- Resume boil and continue cooking.
- Stir all the while until mixture takes on appearance of cooked farina.
- Remove from heat, season with salt, pepper and beat hard with electric mixer for 5 minutes.
- Mixture will take on a creamy appearance.
- Pour into 13 x 9 x 2-inch casserole and allow to sit.
