Ingredients

  • 1 qt. milk
  • 1/2 c. butter
  • 1 c. hominy grits
  • 1 c. cheese (Gruyere)
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1/3 c. grated Parmesan cheese

Method

  • Bring milk to a boil, add butter then gradually stir in grits. Be sure to not use quick cooking grits.
  • Resume boil and continue cooking.
  • Stir all the while until mixture takes on appearance of cooked farina.
  • Remove from heat, season with salt, pepper and beat hard with electric mixer for 5 minutes.
  • Mixture will take on a creamy appearance.
  • Pour into 13 x 9 x 2-inch casserole and allow to sit.
