Ingredients

  • 12 ripe jalapenos
  • 1/2 pound of cheddar cheese
  • 1/4 pound of thinly sliced bacon
  • 1 avocado
  • 1/2 cup fresh cilantro
  • juice of half of a lime
  • 1/4 small red onion

Method

  • 1. remove tops from avocados and carefully remove seeds.
  • 2. add one diced avocado, cilcantro, lime and onion to a bowl and mix into a smooth consistency.
  • 3. add a teaspoon of avocado mixture into the jalapeno. pressing all the way in.
  • 4. slice cheese into sticks that fit into each avacado and place inside each jalapeno, pushing all of the way in.
  • 5. cut bacon in half and place middle of slice over opening in the jalapeno. wrap both sides down to the bottom and secure with toothpick.
  • 6. grill on med-low heat rotating every 5 minutes until bacon is cooked.
  • 7. remove toothpick sna eat.
