Ingredients
- 1 whole chicken (about 2 2/3 lb.)
- 1 Tbsp. salt
- 1 Tbsp. cooking wine or sherry
- 1 green onion, cut into 6 pieces
- 2 slices ginger root
- 20 slices ham (about 4 oz.)
- 1 tsp. cornstarch, mixed with 2 tsp. water
- broccoli (for garnish)
Method
- Rub the exterior and the cavity of the chicken with the first 4 ingredients and allow to stand for 1 hour.
- Place the chicken, breast side up, on a heatproof platter.
- Steam over high heat for 20 minutes. Remove the chicken. Retain the broth. Allow the chicken to cool, then bone.
- Cut the chicken meat into pieces 2-inches wide and 1-inch thick.
