Ingredients

  • 7 pound green tomatoes
  • 1 gal. water
  • 4 c. lime (pickling)
  • 4 pound sugar
  • 1 gal. vinegar
  • 1/4 c. pickling spices
  • 1 stick cinnamon (2")
  • 1 tbsp. salt

Method

  • Mix lime and water well, letting any lime which does not dissolve settle to the bottom.
  • Select, wash, dry and slice tomatoes.
  • Pour off lime water and add in sliced tomatoes to it.
  • Soak 24 hrs.
  • Wash each piece well under running water and dry.
  • Mix sugar and vinegar; pour over the tomatoes.
  • Soak 12 hrs.
  • Add in spices and bring to a boil.
  • Cook at which point for 30 min.
  • Place in glass jars.
  • Will keep unsealed.
