Ingredients

  • 1 lb. (4 c.) fresh snap beans, cut into 1-inch pieces, or 2 pkg. (10 oz. each) frozen cut beans, slightly thawed
  • 2/3 c. long grain rice
  • 1 1/3 c. water
  • 3/4 tsp. salt
  • 6 slices bacon
  • 1 Tbsp. butter or margarine
  • 1 tsp. salt
  • 1/4 tsp. ground black pepper
  • 1/3 c. chopped onion
  • 1/3 c. water
  • 1 c. sour cream
  • 1 tsp. dried dill weed (optional)
  • dash of salt
  • 2 tsp. lemon juice
  • 1 tsp. Worcestershire sauce

Method

  • Wash, trim and cut fresh beans.
  • Measure 4 cups and set aside. Combine rice, 1 1/3 cups water and 3/4 teaspoon salt in saucepan. Bring to a boil.
  • Reduce heat.
  • Cover and simmer 15 minutes, or until rice has absorbed the water.
