Ingredients
- 2 lb. green beans, trimmed
- salt
- 1/4 c. white vinegar
- 3 Tbsp. Dijon mustard
- 2 Tbsp. oil
- 1 Tbsp. lemon juice
- 1/4 tsp. pepper
- 1/8 tsp. each: dried tarragon and basil
Method
- Cook beans in salted water 5 to 8 minutes, until crisp-tender. Drain.
- In a bowl, whisk together remaining ingredients and 1/2 teaspoon salt.
- Add beans and toss.
- Serve hot or cold.
