Ingredients

  • 250 g unsalted butter
  • ½ cup caster sugar
  • 1 egg yolk
  • ¼ teaspoon ground cloves
  • ½ teaspoon imitation vanilla essence
  • ⅓ cup brandy or ouzo
  • ⅓ teaspoon bicarbonate of soda, dissolved in 1 tablespoon lemon juice
  • ½ cup toasted almonds, finely chopped
  • 4 cups flour, sifted
  • icing sugar , sifted

Method

1. Beat butter and sugar in a bowl with an electric mixer until light and fluffy. Add egg yolk, ground cloves, vanilla essence, brandy and the soda and lemon juice mixture; mix well.

2. Fold in almonds and sifted flour. Roll two tablespoons of mixture into sausage shapes. Form into oval shapes. Place on ungreased baking tray.

3. Bake at 150°C for 15 minutes, or until lightly browned. Loosen from tray and cool for 5 minutes. Transfer to a wire rack to cool completely. Dust with sifted icing sugar. Store in an airtight container.
